Hey guys!
Welcome to my first Mediterranean Monday! I did an intro into the Mediterranean Diet last week, and if you want to take your first steps towards a healthier life, here is a great start! (If you want to hear me talk about my process so far, check out this post)
Most of my recipes will be for one person, but just add accordingly.
I love recipes that are easy and fast. Plus, I love an excuse to throw in a sweet potato.
RECIPE:
1 sweet potato split in half
1/3 cup of chickpeas or garbanzo beans
1 tablespoon of olive oil
cumin
basil
paprika
sea salt
pepper
SAUCE:
2 tablespoons Pine nut hummus (or any hummus)
dill
minced garlic
water
sea salt
OPTIONAL:
feta
hot sauce
INSTRUCTIONS:
- Heat the oven to 400 degrees
- Cut the sweet potato in half, brush olive oil on skin, and sprinkle pepper on the sweet potato
- Rinse the chickpeas and mix with olive oil. Sprinkle in the spices to your liking.
- Put everything on a baking sheet and put in the oven for 35 minutes.
- Take the chickpeas out of the oven. Replace the sweet potato for another 10 minutes or until soft.
- Once the sweet potato is soft, crush up the inside with a fork. Add chickpeas, sauce, hot sauce and feta cheese to the potatoes.
SAUCE:
Mix everything together until smooth consistency.
