Hello my name is Taylor, and I am a Panera Bread addict.
In all seriousness, when I was a vegetarian, it was my go to place to grab some quick food. I lived on the Garden Pesto Vegetable Soup and the Mediterranean Veggie Sandwich. That’s why I wanted to recreate the veggie sandwich for this Mediterranean Monday!
I did a few switch ups! I used guacamole instead of jalapeño hummus, and I didn’t include tomatoes because I hate them with a passion. They are the only food I will not even try to eat. The only tomato product I eat is Whataburger ketchup and salsa(that’s right – I don’t eat tomato sauce on pizza).
A good bread was hard to find, but I finally found a tomato basil at a natural grocery store. Any bread will do, but I think it is better with a thicker slice.
Another hard to find ingredient was the Peppadew peppers, but I found them on Amazon.
Otherwise this is a super easy sandwich – no oven/microwave required! Just cut up the vegetables and TA DA! You have a tasty creation!

Oh boy, i can’t remember the last time I’ve been to Panera. I have been avoiding it because it is very addicting! Your sandwich looks delicious though!

Thanks so much! Panera bread is so delicious. If I was a wealthy lady, I would quit cooking and eat every meal there!
