In Texas, everyone has a salsa for every occasion. One of my favorite seasonal salsa involves peaches!
I love a fresh, sweet peach in the spring – and it is every better when it’s spicy in a salsa! The following peach salsa recipe is great for adding a sweet, spicy tang to every dish. I love adding it to Al Pastor tacos or chicken fajita!
Ingredients
5 Roma tomatoes
3 peaches
1 red onion
1 jalapeno
1/2 red bell pepper
4 garlic cloves, minced
1 c cilantro
1 Tbsp lime juice
1 tsp salt
1/2 tsp cumin
1/4 tsp cayenne
Directions
1. Cut all vegetables, and leave the seeds in the jalapeno if you like your salsa hot.
2. Take a food processor or a blender and start to dump the ingredients you chopped up in. Add the garlic and cilantro in last.
3. Add the remaining ingredients in the blender, and blend until desired consistency
4. Store in the fridge overnight or at least 2 hours.
